Head Chef Steve Carson

Head Chef Steve Carson leads our small culinary team at the lodge, and alongside his sous chef meticulously creates all the daily menus at Fiordland Lodge. Steve has an impressive resume and a diverse background within the culinary industry having experience over a range of dining operations including head chef at North Islands famous hunting and fishing Poronui Lodge. Steve has served in a variety of positions in private restaurants and lodges throughout  New Zealand and has extensive knowledge of New Zealand cuisine and food techniques. 

The dining concept that prevails through the Lodge is the familiar farm-to-table ideology that complements the lodge impeccably. Steve is dedicated to sourcing the freshest of ingredients, creating relationships with local farmers and smaller producers and saturating the dishes he creates with local Fiordland and Southland ingredients. This resourcefulness is second nature to Steve who puts huge emphasis on making everything from scratch, using the food he sources from the onsite garden and the hills and rivers nearby. His close, personal connection with his suppliers has instilled a passion for food and creating local dishes that enhance the natural flavours of the ingredients.

Lou has worked at Fiordland Lodge since 2011 and her passion for exceeding guest experiences see her play a strong leadership role at Fiordland Lodge. "The culture of food and wine is incredibly gratifying" says Lou who strives to deliver unrivalled experiences afforded by a combination of exceptional New Zealand cuisine.

Lou assists in nurturing and growing the Lodge's wine list and cellar and is always conscious to pass on value, quality, and diversity when recommending wines. During the nightly cocktail hour. She leads her staff to seek out personalized attention by seeking out there preferences and offering suggestions from a tempting range of classic cocktails, premium spirits, thoughtfully chosen wines, and a selection of bottled beers. Her commitment towards exemplary service and her own passion and persona for looking after our guests shapes the high personal customer service delivered throughout the lodge.
